Blanch the beans in boiling water for 2 minutes and then quickly immerse in ice water to stop the cooking and set the bright green color. Drain well
Heat a skillet over medium heat. Add Pancetta and sauté until crispy. Add onions and garlic; sauté for a couple minutes, making sure the garlic doesn’t burn. Add drained Euro Beans and sauté until warmed (about 5 minutes). Season with salt and pepper
Other greenhouse vegetables can be added to the mix during the sautéing. Consider adding diced or julienne-cut Sweet Rainbow Peppers or halved Mini Mixers® tomatoes.
