- Blanch the beans in boiling water for 2 minutes and then quickly immerse them in ice water to stop the cooking and set the bright green colour. Drain well.
- Heat a skillet over medium heat. Add onions sauté until translucent then add garlic and continue to sauté for a couple of minutes making sure the garlic does not burn.
- Add the drained Euro beans and sauté until warmed through, about 5 minutes. Season with salt and pepper to taste.
- Reduce the heat and gently add in the sour cream and fresh dill. Heat and stir well.
- Serve immediately.
