  1. Using a vegetable peeler, slice the cucumber lengthwise into 6 thin slices; place in a single layer on a plate.
  2. Cut ham and cheese into long slices.
  3. Lay ham strips on top of the cucumber covering the slice, top with cheese slices.
  4. Starting at one end of the cucumber, roll it into a tight spiral; secure with a toothpick.

Cooking Tips

After slicing the cucumber into thin slices, place on a paper towel for a few seconds to remove some of the water from the cucumber.
