- Preheat oven to 350°F. Line 8x8 baking pan with parchment.
- In a small bowl, stir together egg with the sugar. Add the oil.
- In a second bowl, stir cornstarch in with the cut strawberries.
- In a large bowl, stir to combine oats, flour, baking powder, cinnamon. Pour and mix in the egg, sugar and oil. Then stir to combine the strawberries.
- Press into your pan and bake for 30-35 minutes until lightly golden around the edges.
- Remove, cool and cut into squares.
- Store in air-tight container for 2-3 days. With the fresh berries, this square will get softer if it is stored, but it will still taste great.
Cooking Tips
Make these fancier by adding a white drizzle on top when cool. Stir together ½ cup of icing sugar with 1 tbsp water until smooth.
