- Line a baking sheet with parchment paper or foil and set aside
- Preheat oven to 300° F
- Halve the tomatoes and place in large bowl. Add olive oil, garlic, onion, seasoning and sugar and toss well
- Place the tomato halves on the prepared baking sheet and top evenly with all the oil mixture. Season with salt and pepper
- Roast in oven for 1 hour. Turn the temperature up to 425° F and roast for another 15 minutes or until the tops are slightly charred
- Remove from baking sheet and place on serving plate
Cooking Tips
Use immediately as a side dish or save and blend to use as a base for a tomato pasta sauce.
