- Cut peppers in half; remove the core and seeds. Slice in long julienne slices and place in salad bowl.
- Place sliced red onion into a small bowl with iced water for 15 minutes. This helps remove the strong onion taste. Drain and rinse; add to the peppers in the salad bowl.
- To the bowl, add the vinegar, sesame oil with salt and pepper to taste. Toss well. Cover and store in refrigerator for 1 hour to allow flavours to mingle.
- Toss with crumbled feta cheese and parsley. Serve immediately.
