  1. Cut peppers in half; remove the core and seeds. Slice in long julienne slices and place in salad bowl.
  2. Place sliced red onion into a small bowl with iced water for 15 minutes. This helps remove the strong onion taste. Drain and rinse; add to the peppers in the salad bowl.
  3. To the bowl, add the vinegar, sesame oil with salt and pepper to taste. Toss well. Cover and store in refrigerator for 1 hour to allow flavours to mingle.
  4. Toss with crumbled feta cheese and parsley. Serve immediately.

This is a great salad to serve with grilled meats, chicken or fish for a quick healthy weeknight dinner.
