Directions
- Rinse beans in filtered water and set aside.
- Slice tomatoes and drizzle with olive oil, roast for an hour at 400 F.
- Sauté the garlic, onions, carrots and herbs in a tbsp of oil until fragrant and onions become clear.
- Add your lemon zest and juice followed by your soaked beans.
- Add your broth and roasted tomatoes then bring to a boil. Simmer 1 - 1.5 hours.
- Serve with parmesan and enjoy!
