- Blanch beans in boiling water for 2 minutes and then quickly put into ice water to stop the cooking and set the bright green color
- Drain well and then toss with vinegar, oil, salt, pepper and mint
- Place on serving plate or bowl and garnish with remaining mint
Cooking Tips
By itself, this salad is deliciously fresh; however, you may want to consider adding more food items for a salad platter for a company dinner. Including the beans, place one whole Burrata or fresh Mozzarella cheese drizzled with olive oil, salt, pepper and chili flakes. Toss together ¼ cup pitted and sliced Kalamata olives with 1 tablespoon drained capers and place beside cheese. Serve with crusty bread.
