Directions

  1. Rinse beans in filtered water and set aside.
  2. Slice tomatoes and drizzle with olive oil, roast for an hour at 400 F.
  3. Sauté the garlic, onions, carrots and herbs in a tbsp of oil until fragrant and onions become clear.
  4. Add your lemon zest and juice followed by your soaked beans.
  5. Add your broth and roasted tomatoes then bring to a boil. Simmer 1 - 1.5 hours.
  6. Serve with parmesan and enjoy!
