  1. With the rack in the middle position, preheat the oven to 400°F (200°C).
  2. In a large skillet over medium-high heat, cook the meat in the oil for 4 minutes, breaking it up with a wooden spoon, until starting to brown.
  3. Add the remaining ingredients.
  4. Continue to cook for 5 minutes or until the vegetables are tender, stirring a few times.
  5. Season with salt and pepper. Keep warm Pizzas
  6. In a small bowl, combine the oil, garlic and red pepper flakes.
  7. Lay the pitas out on a non-stick or parchment paper-lined baking sheet. Using a pastry brush, cover the pitas with the oil mixture. Bake for 6 minutes.
  8. Meanwhile, in the same bowl used to make the oil mixture, combine the yogurt, lemon zest and juice. Season with salt and pepper.
  9. Spread the yogurt mixture over the pitas. Top with the beef mixture and garnish with the parsley. On a serving platter, cut the pizzas into wedges and serve.
